"What happened to Red in GS/HGSS"
I've been thinking a lot about it recently but why did Red abondon his position as a champion? He did not even give any news to his own mother, leaving the latter very worried about him and seems to be only focused on grinding as he spent three years training on Mt. Silver. He also did not help defeating Team Rocket despite knowing that they are still active (as Archer said that he'll resurrect Team Rocket in FRLG). What happened to him? Did he lose all his love for exploration and challenge? Maybe he's just bored? Personally, i think that guy is just bored as he's seen everything in his region and as he did not face any "worthy" opponent ever since he became a champion and also developed a some kind of megalomania as he wants to continue leveling up his Pokémon even if he's already a champion, forgetting the real meaning of the Pokémon battles. So perhaps you remind him of his love for challenge, of the purpose of the Pokémon battle by defeating him as you prove him that there's still trainers who can surpass him , which is why he leaves Mt.Silver afterwards and which is why he participates in PWT and is a boss of the battle tree in SM/USUM: the guy is now looking for worthy opponents around the world. I also think that Red is supposed to represent our "past self" as he's our avatar from the previous games and also the final boss in GS/HGSS. So technically, the whole battle is a metaphor: you confront your past self to surpass him and become a better trainer than you used to be.
